This sweet, tangy, and slightly spicy red pepper jelly is perfect as a condiment for cheese boards, sandwiches, or as a glaze for meats.


Ingredients

  • 4 large red bell peppers (or a mix of red and green for variety)
  • 1 medium red chili pepper (optional, for heat; adjust to taste)
  • 2 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1 packet (3 oz) liquid pectin or 1.75 oz powdered pectin
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice

Instructions

1. Prepare the Peppers

  1. Wash the peppers thoroughly.
  2. Remove stems, seeds, and membranes.
  3. Finely chop the peppers, or pulse them in a food processor until finely minced (but not puréed).

2. Cook the Mixture

  1. In a large saucepan, combine the minced peppers, sugar, apple cider vinegar, salt, and lemon juice.
  2. Stir the mixture over medium heat until the sugar dissolves completely.

3. Bring to a Boil

  1. Increase the heat to high and bring the mixture to a rolling boil.
  2. Stir occasionally to prevent sticking.

4. Add the Pectin

  1. Stir in the pectin (liquid or powdered) and return the mixture to a boil.
  2. Boil hard for 1-2 minutes, stirring constantly.

5. Test for Doneness

  1. Remove the pot from the heat.
  2. To check if the jelly will set, drop a small spoonful onto a cold plate. If it thickens slightly and forms a gel-like consistency, it’s ready.

6. Skim and Pour

  1. Skim off any foam from the surface with a spoon.
  2. Pour the hot jelly into sterilized jars, leaving about 1/4 inch of headspace at the top.

7. Seal the Jars

  1. Wipe the rims of the jars with a clean, damp cloth.
  2. Seal with sterilized lids and rings.

8. Process for Storage

  1. For long-term storage, process the jars in a boiling water bath for 10 minutes.
  2. Remove from the water and let them cool completely.

Tips

  • Adjust Heat: Add more or fewer chili peppers based on your spice preference.
  • Storage: Store unopened jars in a cool, dark place for up to 1 year. Refrigerate after opening.
